Every business wants to minimize their overhead costs. That's why some businesses cut down on the number of staff they employ. For an average grocery shop, is it possible to have one staff man it efficiently?

That one staff would serve the customers and receive payments. Is it ideal for one staff alone to work in a grocery shop?
 
The size of the shop also counts, if it's not a large store, then yes one staff is more than enough, for a larger shop, you might require more staffs.
 
One staff or even no staff will depend on the size of the grocery store and the number of customers, I often find small grocery stores that are only manned by one owner, and it seems they take turns with their spouse. If there are many customers and your grocery store is large, reducing staff will be troublesome and even detrimental.
