So I have been booked to come train students of of a fashion academy outside my city. The organization is paying me for the training. They are paying a hotel for me with food inclusive. They are providing a car for me to move around with a driver. And that is for two days.

I can spend the night in a relatives place in that city. I can feed myself with food that would not be as costly as the hotel food. I can use public transportation.

How do I tell the organizers to shut out all those expenses and give me the money instead?

You can honestly tell them that you'd prefer to receive the money to manage your expenses yourself, as you can stay with relatives, eat for less, and use public transportation, which would be more efficient. You can also explain that eliminating those expenses would help optimize your budget without affecting the quality of your training.

I completely agree with @King Belieal telling them that would send a wrong message to the organization. If the contract was given to you by someone you know and you have a close relationship with, then you can ship the idea in, even in situations like this, once they know you can sort yourself out they won't be willing to pay all that much, so it's better you don't tell them.
