Yes; I recently bought $25 in USDC (transferred it out of Bitcoin) and depending on how it does long-term, I may buy more and more to use as a long-term investment.

They do serve as a hedge against inflation, they can also be a dynamic part of an investment strategy.

I work for PTWs paying only cryptos to users (at least, until in my country it would be possible), being two of them stable coins. In one of them, I prefer to swap the earned altcoins to the stable coin, to secure earnings to a discrete value. It's not exactly an investment, because I have never spent a single penny to buy cryptos, but it's the only way to not see my salary continuously plummeting.

I don't really invest in stablecoins, I just trade them, to change crypto to stablecoins or vice versa, I think they are very useful for that.
