There are customers that always call to book services and the timeframe for delivery of the service is just a day or two or a timeframe that would put the skilled pro into pressure.

You can't take your clothes to the laundry man to wash and you expect him to deliver in two hours. Do you think these last minute customers should be charged premium price?

This is a very good question. In ground truth, last minute customers often want services very quickly and that pressure makes a skilled pro use more energy and time. It is a saying that hurry is not a blessing.

Therefore, setting a premium price for last minute requests is completely fair because it compensates for stress and extra effort. This also teaches customers to plan ahead. It's like if you call a taxi at midnight, the price goes up. Same logic applies here.
 
If you want the job to be done in a shorter period of time, then you should be willing to pay an extra price.
I would be suspending some other person's work if I am to deliver for another customer urgently. And I have to be compensated for potential troubles.

That's the straight up truth. If work is done quickly, it's like driving a camel in the desert with a heavy load. You have to pay more to get it to arrive sooner. There are no shortcuts. As the Chinese proverb says, hurry is not a blessing. But if you put an extra price, you get speed and faster results. At the end of the day, you must know that quality and time have a balance and money is the bridge that will get you across.
