What do you do on days that business peak hours are overwhelming for your staff?

There are days that peak hours of business can just be overwhelming for your staff. So many customers that come in on that particular day. And this doesn't happen everyday.

How do you manage everything at that point?

I think at this point, I would direct the staff to focus on the essential tasks that would help to serve customers. The non essential tasks can be shifted.
