Exhibitors pay for their stall for the entire duration of the exhibition, yet in some cases they pack up early. What could be the possible reasons for doing so?

This can be due to different or several reasons. So it might just be an individual thing. It can even be about something personal that has nothing to do with the exhibition
There may be several reasons. The exhibitor may have an issue s(he) needs to deal with urgently. Another reason is if the exhibitor is selling products, the products may have already sold out on the spot, so they have to close early.

Am pretty sure they must have a good reason for doing so, i doubt they would just close it for no good reason.
Yes they might have a very tangible reason for doing so. it would be best known to them and that's it
