I’ve been trying to understand how the whole “best friend solar system” feature works on Snapchat, but I’m still unclear about a few details.

This Snapchat planets feature basically depends on your interactions with friends. If you talk frequently and send snaps and chats, then your rank will rise quickly. It's a saying that if you plant a seed, you have to water it. Updates are made regularly based on your and your friend's activity. Accuracy is based on consistency of communication. If you are inactive for a while, your position can drop significantly. It's a game of engagement and consistency.
