In my location you can find some people operating the selling of food by the roadsides years in years out running very stugnanted businesses on the same place for years and years. What could be the problem causing that?

Sometimes it is not about the business but the expenses and bills that the seller have got to pay. Sometimes it is just the family financial problem that's stagnating the business
I think it's their sales revenue does not allow them to grow. They can just sell on the streets.
The sales revenue of the street food sellers is often better than online sellers, and in some places they only work for a few hours in the evening when there are more customers.

The funny thing about this kind of business is that might be in that same place doing it for years, but at the end of the day they are making good amount of money home. I have come across a lot of people who sell by the road side and have been able to take care of their family and even startup an investment with what they have earned.

You are very right. In most of the times l see them operating during the morning times until 3:00 pm to be precisely.
There might be a lot of vendors offering similar food in one spot, which creates tough competition. This can cause fewer customers to visit each vendor, making it hard for any one business to succeed or expand.
Of course yes one should work on cooking the most liked foods by most people in the vicinity for sure.

They need to innovate by changing their menu. It's a roadside it might be delicate for human health unless there is no dust particles that may spread in the food display. It's crucial.

I never buy food sold at the roadside. There is also no business here selling of foods in the road side. It is against the health protocols. They will not be granted a permit by the city government.
It is to sell varieties of food and don't forget to reduce the prices to lure more people to buy. it would work best that way
