I think that the data usage among the online apps varies significantly with the type of the apps one gets engaged in using. For instance the online apps that fetch some live footage to transmit on the phone uses higher amount of data compared to the others.

The apps which show videos are definitely consuming a lot of data compared to simpler apps or even music apps. For example engagedhits on timebucks is consuming more than 1 GB of data and there is no data for other applications.
There are even apps that don't show videos but they are bandwidth suckers and would finish your subscription in no time. Try crypto exchange apps.
Data consumption between apps differs. There are apps that don't even consume up to MB in over three weeks while others do 1GB a day.
There are apps that completely depend on internet connection to work and they consume more data than others.

Yes there is always a difference with the apps. Let's take TikTok for example, the amount of data TikTok uses is not the same compared to Whatsapp.
Apps that have to load graphics and pictures would surely consume more bandwidth than apps that don't load such.
