It's very possible to play the guitars on phone apps. So have you ever thought of downloading a device remote app and use that to operate let say the TV for instance.

For a television app to work on your phone, your phone needs to come with an IR blaster. Without this you can't use any remote app.
What we have in smartphones are just abridged version of basic equipment. They don't give full functionality.
As an instrumentalist myself, I can tell you that it is only possible to play a guitar on phone if you are using a professional Digital Audio Workstation and that can't be used for live music.
