What are the specific limitations of food business?

The challenge with food business that I also see is that tastes and preferences of people regarding food keeps on changing. That would lead to more stress for the person running a food business to try and keep up with.
 
Main challenge which these people face is keeping food fresh. Let's suppose I cooked food for my customers and on that day due to any reason only few people visit my shop then keeping these very fresh won't remain possible. Other challenge is hygienic food is on prime importance once it's quality decrease customers will take it's benefits and they started asking for return their money as after eating that food they fell ill. This business is very sensitive and it required a lot of expertise.
