Am pretty sure the price of the bread will be one of the factors that determines the sales of bread in every location.
I think nowadays, it is more of the number of retail shops that are ready to sell your bread in their shops.

A bakery near home shut down only a very few buys. Their bread is not what people want. It's better for a bakery owner to diversify her bread
it should be freshly baked so that customers would always buy. I don't like to eat old bread as I don't enjoy it that way
If the sale of bread of a bakery is not satisfactory, there may be two reasons. One is the taste of bread. The other is the price.

I agree with you. It's the feedback I received from the bread buyers of the bakery of my neigbor their bread is tasteless. It does not match with the taste.
When I am going to buy bread and pastries I always prioritize quality and taste, good bread will be soft and filling for breakfast, besides that there are also competing factors such as the presence of well-known bread sellers such as Holland Bakery etc.
it is the demand for bread I'm an area. More demands means more supply of it and this will bring more production
The competition among bread sellers is increasingly stiff in my locality.
Several factors can determine the success of bread and pastry sales, such as product taste and uniqueness or quality, price, location and promotion, target market, and consumer lifestyle.
The size of the market the bakery is specifically serving would determine how much demand the bakery would have. That's basic.
